Early in 2022, I signed a lease on a small retail space at 81 Clark Street in the heart of the West End of Portland Maine. After months of design and construction and repairs, the bakery- meant to evoke the romanticism of a 1930’s French bakery- opened.. This micro-boulangerie is designed to be an efficient bakery that produces a limited array of delicious, rustic breads + pastry, provides work for a few dedicated bakers and offers a warm and intimate hub for the neighborhood. We also offer coffee and tea, biscotti, granola, exceptional olive oil, a few treats to go with your bread and a revolving selection of incredible wines. Additionally, we sell a select offering of beautiful pottery from SoftSet Ceramics.
We mill in-house all of our whole grain flour from spelt, wheat + rye, grown in Aroostic County in Maine, to capture the full and fresh flavor of these wonderful grains. Many of the things we make are “sourdough”, but not all. The bakery is designed so that you can see and smell and hear the sounds of baking. Feel free to linger for a bit. We will let you know what is still coming out of the ovens- and if we have time, we are happy to answer your questions.
