After a summer and fall of “building, grilling, shaking, and tasting”, Bar Futo has announced that they will be opening their new restaurant in Portland’s Old Port at 425 Fore Street for dinner on Friday, December 16th, 2022.
As reported back in March of 2022, Bar Futo is brought to Portland by Owner and Chef Jordan Rubin of Mr. Tuna (Portland Public Market House and multiple food trucks) and Crispy Gai (Exchange Street). A Japanese-inspired restaurant rooted in binchotan-fired cooking, Bar Futo’s menu will consist of skewers, large cuts of meat and whole fish grilled over Japanese charcoal (binchotan), and kakigori (Japanese shaved ice) guided by seasonal ingredients. The bar program will be curated by Alyssa Mikiko DiPasquale (The Koji Club) and will consist of a robust sake list, and inventive and classic cocktails including a selection of Highballs powered by the ultra-rare Suntory Toki highball machine.
Opening December 16th, Bar Futo will be open all weekend and into the week (Closed Christmas Eve, Christmas and day after Christmas). Hours 5 PM – 9:30 PM most evenings.
